Third course: Le Coureur des bois, Le Calumet. Medium- or full-bodied red wines such as Médoc, Côtes du Rhône Villages, Chianti, Cabernet Sauvignon, Syrah, Zinfandel, and port. White dessert wines, ice wine, cider wine, Sauterne, and late vintages.
